Baked Bacon-Wrapped Fish Fillet with Mango Salsa

The classic caesar is given a meatier, manlier twist - all in the name of BACON!
Ingredients: 1 head of romaine lettuce, 120 g queso rustico, 4 slices of thick-slice honey-cured bacon, 2 egg yolks, 1 tsp mustard, 1 tbsp of bagoong (shrimp paste), 125 ml vegetable oil, ½ lemon, salt, pepper and cayenne pepper.
1. In a mixer (or by hand), combine mustard, egg yolks, bagoong, black pepper and cayenne pepper. Slowly pour in oil until mayonnaise-like sauce is formed. Squeeze lemon juice onto the sauce.
2. Grill the bacon 1 to 2 minutes on each side until fully cooked.
3. Assemble the salad by mixing lettuce with the dressing. Top with the grilled bacon strips.
4. Shave some queso rustico over the salad using a vegetable peeler.
